Best Ever Butternut Squash

Ready for the best ever butternut squash?! This is a fall recipe that will be on repeat in your kitchen this season. You can add it to your Friendsgiving or Thanksgiving menu, your weekly meal prep, etc. It’s sweet, spicy and absolutely delicious!

Butternut Squash Specifics

This butternut squash is sooo amazing but super simple! I promise it’s one of the best veggie recipes you’ll have! It’s amazing to eat seasonally as well and eating that way has great benefits too. With that, let’s go ahead and dive into what you need:

  • Butternut Squash: Butternut squash is so delicious and also has amazing benefits too! Butternut squash is also packed full of vitamins, as well as calcium and magnesium! As I mentioned, shopping seasonally is great as the veggies will give you the most bang for you buck. If you can swing it, grab your squash from the Farmer’s Market as well and trust me the flavor will be INSANE!
  • Spices: For the bulk of the flavor, we used a combination of nutmeg, allspice and cinnamon, all of the fall flavors! Cinnamon in and of itself is such a great inflammatory, which is amazing as we move into the holiday season!
  • Sweetness: We have to add a sweet warm flavor to the squash as well, which we used the amazing flavor of maple syrup and pure vanilla extract. You can use pure maple syrup, or you can go with a sugar free option and use this monk fruit maple syrup.

As I mentioned, this is amazing to meal prep in the beginning of the week or pair as a side for any fall dinner! I even have this alongside eggs too!

Best Ever Butternut Squash

Ingredients

  • 4 c butternut squash, cubed
  • 1 tbsp avocado oil
  • 1 tbsp maple syrup
  • 1 tsp pink sea salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp allspice

Instructions

Butternut Squashin’

  1. Preheat oven to 400 degrees.
  2. From there, prepare your butternut squash. It should be cubed or sliced into small, bite sized pieces.
  3. Drizzle your oil and maple syrup over the squash in a large bowl and mix well, then add the spices and mix again.
  4. Place squash laid out on a parchment lined baking sheet. 
  5. Bake squash for ~30 minutes, and enjoy!

Notes

Recipe will stay good in the fridge for about a week.
